Fix docker compose setup for staging + production

When docker runs for both staging and production, some ports might enter in conflict. Also consider that they are running together.

For now, the problem that we have is that both staging and production opening port 8001 for prometheus.

With the changes on #1773 and #1771, the ports are configurable through env files, so the conflict should not be happening
