Remove jQuery UI

jQuery UI is deprecated and will fall out of support fairly soon. Most things that are done via that library can now be done in native JavaScript. Remove the dependency on jQuery UI so that this library will still be useful moving into the future.

Patches to replace jQuery with vanilla JS calls where appropriate are welcome.

jQuery sortable replacement is a fairly large piece of work as we do not have good test coverage of the drag and drop UI. For the time being the jQueryUI project is still providing updates to keep jQueryUI compatible with jQuery releases and current Browser versions https://blog.jqueryui.com/2024/10/jquery-ui-1-14-1-released/

Would you consider bridging the gap by using Sortable.js until all of the drag & drop code can be re-written in vanilla JS? It is still a bit cumbersome to write that code in vanilla JS right now.

Sortable.js is ok but any replacement will have it's issues. As @lucasnetau mentioned patches are welcome and doing piece-by-piece will help isolate any transition issues that may arise.
