How to override font-family?

I cannot figure out how to override the default.

Not sure if this is the way, but it worked:

    extend: {
      semanticTokens: {
        'fonts.sans': {
          value: 'Red Hat Text Variable',
        },
      },
    },
  },

[adaboese]

Also defining --font-fallback: "Red Hat Text Variable"; in CSS works too
