This PR refreshes outdated external and internal documentation links across multiple Lido docs pages. It updates GitHub org renames (eth-educators → ethstaker, prysmaticlabs → OffchainLabs), updates Lido research forum URLs, switches a hardcoded contract source link from a branch to a tagged release, refreshes a couple of third-party documentation URLs, updates a Holesky reference to Hoodi, and normalizes a few internal URL paths.
