[BUG] Settings conflict, some settings reset others can lead to broken stream

Example of catastrophic, in jepg mode changing the quality settings will reset stream to x264enc and break client.
Need to fix ASAP.

Conflict with old individual settings setters and new unified method, this fixes it "
