refactor: switch from victoriametrics to kube-prometheus-stack in default installation

Expected Behavior

Kube-prometheus-stack is installed by default

Current Behavior

VictoriaMetrics is installed by default

For small projects it isn't necessary to install VictoriaMetrics. It adds some complexity than profits.
