It would be useful to be able to change the category of locations in bulk rather than individually. Also, it would be useful to be able to move locations up and down on the list in order to be able to group locations by category (e.g. breakfast, lunch etc) |

This lands in v3.2.0! 🎉 You can now bulk-change the category of locations: in the trip's places sidebar, switch on selection mode (the checkmark button), tick the places you want, and a new tag button applies a single category — or "No category" — to all of them at once (with undo). It also works through the AI assistant, so "re-categorise these 80 places" is one action instead of 80. The second half of your request — reordering locations to group them by category — isn't part of this; that's a separate piece of work. But the bulk re-categorise you asked for is in v3.2.0.
