Doesn't build in Apple silicon Macs

Because this repository submodules https://github.com/lancaster-university/codal/ and we have only fixed this issue in lancaster-university/microbit-v2-samples#39.

I've added the fixed to the codal repo in:

• Add CMAKE_SYSTEM_NAME and CMAKE_SYSTEM_VERSION lancaster-university/codal#55

And created a PR here to update the submodule:

• ci: Add macOS x86_64 and arm64 build jobs & update codal submodule. #174
