Change tracking / versioning

Following on from the discussion from here, opening an issue to discuss options for change tracking.

To start off, a brief description of the problem: Now that policy documentation is in its own separate repository, what is the best way to track changes in the documentation?

Existing option: tracking commits in here as @bsmth discussed in the referenced thread

Another option to consider: periodic consolidated change logs for each Firefox release, much like what @mkaply has been doing in policy template releases

Other options?

Thanks a lot for raising and continuing the discussion. A changelog was something we thought about since the beginning of this repo, but never spun up properly. I've put together a PR linked above which tries to organize docs changes per release. Does this cover what you're interested in? Curious about your feedback.
