Migrate from `configor` to `koanf`

configor doesn't properly support reading lists of config structs from environment and, apart from that, seems to be dead anyway. Let's migrate to koanf instead. Most important thing is to maintain backwards compatibility with all existing config variables (in YAML and from env.).
