workflows: pin DROIDIAN_VERSION=current (workaround next's dep conflict)

The "next" rolling snapshot's 2026-05-18 publication has a version skew
that breaks the image build at the droidian-phosh-full install step:

  droidian-phosh-full -> droidian-phosh-minimal -> gnome-control-center (1:48.2)
  droidian-phosh-full -> gnome-clocks -> libgtk-4-1 (>= 4.5)
  libgtk-4-1 Breaks gnome-control-center (< 1:50~)

Switch to the "current" snapshot (Droidian 101 stable, 2025-12-07),
where gnome-control-center 1:48.2 and libgtk-4-1 4.18.4 are both from
the same gnome.48 family and resolve cleanly.

Revisit once "next" is republished with the libgtk/g-c-c versions
realigned (likely within days).
