chore(deps-dev): bump vimeo/psalm from 5.26.1 to v6

Unfortunately, upstream has set very strict PHP version requirements that fail to comply with our platform config despite being on the same minor version (8.1 vs ~8.1.17). So renovate fails to do the bump by itself.
