Java 1.8 = Java 8, not Java 18. Many legacy infrastructures are still on Java 1.8, user might misinterpreted 1.8 > 17.
Documentation edits only. No changes to code or functionality.

Sorry, I prefer to keep the README concise and it is already pretty dense. Java 8 is really old, I don't think it's worth adding a note about it.

For what it's worth, my medium-term goal is to provide a native image for the language server so that users don't even need Java installed
