New exclusions

• G.A.M.M.A. UI mod directory excluded from scan — compressing menu
  assets causes excessive loading times
• lut_* files excluded — color grading/shader textures
• minFileSizeBytes now configurable in profiles.json (default 1024)

Other

• macOS universal binary (Intel + Apple Silicon)
• profiles/ directory in repo root with default.json and quality.json
