I haven't tried it but you should be able to achieve this using the TipTap CodeBlockLowlight extension: https://tiptap.dev/docs/examples/advanced/syntax-highlighting

As mentioned in other issues, there are lots of TipTap extensions we can't have them all and I don't want to include highlight.js as a dependency in @nuxt/ui so it won't be built-in but it should be pretty straightforward using the extensions prop.

Closing this but feel free to comment if you have trouble setting it up.
