The purpose of this PR is to support NixVim plugin metrics in the dashboard. NixVim pre-download all plugins using nix, and it is not a Neovim package manager per-se. Therefore, I scanning Neovim directory to track how many plugins are loaded. Let me know if you are ok with it.
Also, it would be my first contribution to Lua world, and I used the help of AI to come up with a solution. So, do not hesitate to ask for any improvement.
Finally, I tested this code locally (directly inside neovim) and it works.
