Final fixes/improvements for the 1.0.0 release

This release pins the formal API v1.0 definition and includes the 1.0.0 version of the
SDK. v1.0.0 is subject to our
`versioning policy <https://open-forms.readthedocs.io/en/latest/developers/versioning.html>`_.
