Remove unused elasticsearch and elasticsearch7 from docker-compose. All services now rely on elasticsearch710.
Tested by provisioning and running
make create-indexon the notes service since notes was the only thing that specifically called out elasticsearch in its provisioning.I've completed each of the following or determined they are not applicable:
