bug: Temporarily remove the support for Python 3.13 #253

Current Behavior
As highlighted by #250 there was a problem with regards to us not actually testing on the correct Python version and it seems like pendulum doesn't support Python 3.13 and as such we should remove it from the list of supported versions until pendulum has been upgraded or replaced.
Expected Behavior
We should not list versions that aren't actually supported
Steps to Reproduce
Install the SDK in an environment with Python 3.13.
