Progress made towards POC demo

Current plugins have been restructured today and are largely working with the pluginmanager(few issues that need resolved).
Going to have a look at the POC pipeline next, currently this has been hardcoded but will be moved to a YAML pipeline file. Hoping to have the POC fully running in March.

Pipelines can now be visualised in mermaid js with the use of the script in https://github.com/CiaranMcAleer/Mimir-AIP/blob/main/src/pipeline_visualizer.py
