I have multiple email addresses on my GitHub account. It would be nice if there were a way to choose which one to use when creating an account on a third party website using Sign in with GitHub.

At the moment, I do not think GitHub provides a user-side picker during Sign in with GitHub to choose one email address per third-party site.

The behavior mostly depends on what the app asks GitHub for and how that app handles the returned account data:

• Without extra email access, an app may only see your public profile email, or no email if you keep it private.
• If an OAuth app asks for the user:email scope, GitHub says that grants read-only access to your private email addresses.
• The REST email API can list the authenticated user's email addresses and marks which one is primary/verified/visible, but the third-party app decides which one to store or ask you to confirm.

Current practical workarounds are limited:

1. Set the email you want as your primary email before signing in, then change it back afterwards if needed.
2. If the third-party site has account settings, change the email inside that site after the account is created.
3. Revoke the third-party app from GitHub settings and sign in again after changing your primary/public email, if the app cached the first value.
4. Keep your public email private if you do not want arbitrary OAuth apps to receive it without requesting email scope.

So I agree this would be a useful feature request, but today the selection is not exposed as a GitHub authorization-screen choice in the same way repository access or OAuth scopes are shown.
