bug: SES v2 raw email Source includes the From display name, so messages are not listed under their email identity

Current Behavior

When a raw email is sent with SES v2 SendEmail and its From header has a display name:

From: Example App <sender@example.com>

LocalStack stores the whole header value, Example App <sender@example.com>, as the message's Source, instead of the address sender@example.com.

As a result, the message is not found under its email identity:

• GET /_aws/ses?email=sender@example.com returns nothing.
• The SES view of the Web Application does not show the message under the sender@example.com identity.

Setting FromEmailAddress on the request doesn't change this. Source is still the full header value.

Expected Behavior

Source should be the email address only (sender@example.com), as AWS SES ignores the display name when it matches the sender to an identity. When FromEmailAddress is set, it should be used as the Source.

Workaround: create an extra email identity named Example App <sender@example.com>; the messages are then listed under it.
