Fixes for Node18 Deprecation

Now that AWS has said Node18 is EOL and has started to emailing us to tell us to upgrade, they will stop accepting updates to Node18 lambda on 1st November 2025.

I noticed we have a number of references to nodejs18 including one in custom-resources

Will these be updated before the 1st of November?

Yes, they will be updated by then.

Note that #26 resolves this for most situations (custom-resources now inherit runtime of the serverless config)

#26 is useless when the runtime is not Node in the serverless config, i.e. I use Python.

Any news about when this will be updated? In the latest commit of the repo it continues defaulting to NodeJS 18.x.

As @cedric-malfreyt commented this will be problematic for any team not using NodeJS as their main runtime in the SLS config (e.g. Python or Java).
