chore: extract findAndUpdateLatestVersion helper

[GermanJablo]

Follow-up to #15985. Extracts the duplicated "find latest version + update in place" logic into a shared findAndUpdateLatestVersion helper, as suggested by @JarrodMFlesch.

The only difference between the unpublish and autosave paths is the condition for updating: unpublish always updates the latest version, while autosave only updates it if the latest version has autosave: true. The helper takes a shouldUpdate callback to handle this.
