Add appointment service profile

Goal

Add a clinic/service/appointment-based customer AI profile.

Scope

• Define agents, tasks, prompts, skills, ticket rules, memory rules, and owner escalation rules.
• Suggested agents: front office, scheduler, service advisor, follow-up agent, owner.

Acceptance Criteria

• Profile follows docs/17-profile-template.md.
• Scheduling and sensitive service boundaries are documented.
• Profile can run through the sandbox.
• Docs explain intended use cases and boundaries.
