docs: flag-to-output field matrix

Noticed the docs were missing a clean map for flags -> output fields. Drafted this table to bridge the gap for v1.9.0.

Thanks for the thought, but this is already covered by httpx -h and the README. The table here only maps 6 flags out of 40+ and would go stale quickly. Closing to avoid maintaining a second incomplete source of truth.
