Add Monad explorer link and hide Taiko from Entropy chainlist

Summary

This PR makes two changes to the Entropy chainlist on the developer hub:

1. Adds the MonadVision explorer URL for Monad mainnet (chain ID 143) so contract addresses are hyperlinked
2. Hides Taiko from the chainlist by filtering it out in the data fetcher

Rationale

• Monad contracts should link to an explorer for better UX when viewing contract addresses
• Taiko needs to be hidden from the chainlist (per user request)

How has this been tested?

• Current tests cover my changes
• Added new tests
• Manually tested the code

Verified that https://monadvision.com/address/0xd458261e832415cfd3bae5e416fdf3230ce6f134 correctly displays the Monad Entropy contract.

Updates since last revision

• Fixed lint error: Changed HIDDEN_CHAINS from an array to a Set and use .has() instead of .includes() to satisfy the unicorn/prefer-set-has rule

Human Review Checklist

• Verify https://monadvision.com is the preferred Monad mainnet explorer
• Confirm "taiko" matches the chain name returned by the Fortuna API (case-sensitive)
