I think the documentation for markdown basics should document how to underline

This is indeed one of Pandoc feature:

We would need to check it works for all (or most) format before documenting it.

Also Markdown Basics really documents the Markdown syntax feature. Underline is a bit different as it is directly related to Pandoc support.

It goes with SmallCaps and Highligting.
