Remove Python-era artifacts (uvicorn command, asyncpg init container, PYTHONPATH) and align chart defaults with Go app. Add UI_SESSION_SECRET support, fix passthrough/guardrails defaults, improve NOTES.txt with API key guidance and PVC cleanup reminder, and update docs.
