Issue
Backport of #1257
kube-version and rancher-version must be set correctly and we keep forgetting about it except late in the release cycle. So I'm just adding some very simple validation here to make sure we do not forget anymore to do it.
Note: This version is different than main because main has diverged quite a bit (no longer using Dapper).
Note: main currently has scripts with .sh suffix, I'm removing them here and will open another PR for consistency with other scripts.
