Adding Realistic Reference Values

Reference values make generated data more believable without adding heavy dependencies.
Examples:
MERCHANT_NAMES = ["Amazon", "Walmart", "Target", "Costco"]
ACCOUNT_TYPES = ["Checking", "Savings", "Credit Card", "Mortgage"]
ORDER_STATUSES = ["Pending", "Processing", "Shipped", "Delivered"]
CLAIM_STATUSES = ["Approved", "Denied", "Pending", "Paid"]
PRODUCT_CATEGORIES = ["electronics", "apparel", "home", "sports"]Good reference values are:
- recognizable enough for demos
- generic enough for open-source use
- not copied from private systems
- small and dependency-light
- covered by tests when they change behavior
Add reusable values to the shared reference-values module and update tests for realistic mode.
