Adds Plausible and removed Google Analytics

Gets the URL from the .env file and then publishes events to Plausible.

Tested with GH pages, which writes to the testnet version. I have made the stats public, which can be changed, for testing here: https://plausible.io/testnet.manager.rns.rifos.org

It ignores when it is running on localhost so a deployment is required to test.

Finally, it removes two snapshot tests that were not useful. They had a className that was randomly generated that got updated, this caused the tests to fail.

If this looks good, we need translations.
