Is your feature request related to a problem?

There are many interesting Environment Variables that exist for things like Gmail rate limiting, or just how processing occurs. Would it be possible to expose setting these via a 'Settings' page only accessible by admins?

The idea here would be that a) environment variables passed into docker would take precedence and load into database on initial run, but b) you can change and override in this 'Settings' page. Anything in the database would take precedence on subsequent runs. Perhaps document the 'minimal set' of envrionment variables that must be passed (ie, the database connection ones).
