Allow people use callbacks for the elementMap

Support for callbacks in the elementMap. Should make it a bit easier to create strategies for reading xml.

At what points exactly? What data would you like to send to the callbacks?

elementMap is currently an array that's a mapping between an element, and a class. That class must implement the Sabre\XML\Element interface. Instead of class-names, we could also allow people to use closures and have that replace the class. The closure would effectively only be the deserializeXml static method.
