Reset package.json version to 1.1.0 (the last published npm version) so changesets will correctly bump to 2.0.0.
Updated the changeset description to accurately reflect the v2 API rebuild:
Once this merges to main, the changesets GitHub Action will automatically regenerate PR #26 with the correct 2.0.0 version and updated CHANGELOG.
