[DOCS] Incorrect documentation example for change_in #202

On this page: https://docs.semaphoreci.com/using-semaphore/monorepo#jobs, the example in the change_in uses double quotes, but according to this error https://operately.semaphoreci.com/workflows/fe87526a-cc3d-41a4-b433-db3cac63ec08?pipeline_id=dd872542-22f5-4c2d-ae44-db0919179118 double quotes are not allowed.
