PaaS: Document how config is merged in shopware and what we define as a configuration

Sometimes customer wants to overwrite configuration which is quite dangerous because of losing capabilities but needed for example overwriting the logging. We should describe how we configure shopware with the recipes and how a customer can overwrite the configuration.
