Remove Codecarbon from names of emissions metrics

Since we plan to move away from codecarbon, should not have this in the metric name

Have changed metric names to:

"sustainability.emissions.total"
"sustainability.energy_consumed.total"
"sustainability.emissions.delta"
"sustainability.energy_consumed.delta"

And metadata names to:

                        "sustainability": {
                            "country": total.country_name,
                            "country_iso_code": total.country_iso_code,
                            "region": total.region,
                            "codecarbon_version": total.codecarbon_version,
                        }
