Upgrade goldenlayout to version 2

Low priority because the documentation is still on version 1 and the migration documentation is not detailed enough.
Also not much benefit except getting rid of jQuery.

Due to the upgrade to vite, the old feature-goldenlayout2 branch was too far out of date and was replaced by a fresh copy of master.

The documentation of goldenlayout is still not updated to version 2, see golden-layout/golden-layout#660. As such, the update is again postponed because it is not clear how to do it without accurate documentation. For example, there is no public header field anymore to attach the symbols to.

The feature-goldenlayout2 branch has again gotten too far out of sync to realistically merge, so replaced it again with a fresh copy.

The docs still aren't detailed enough and there still seem to be features missing such as customized headers.
I wasted too much time on this, this will not be implemented as the effort is too high in comparison to the advantages.
