Added default feature to disable ArgumentParser coloring

This changes the ArgumentParser options. This seemed easier than parsing out all ANSI color codes instead.

Fixes

• Output wrongly includes control characters ````[1;34m #72

Should first merge:

• Refactor the extension to use a Sphinx Domain (Updated in 2025) #75
• Unpinned ruff for CI + Cleaned up workflow files a little #79

After #79 we can test coloring in the pipelines.
