`ssi-jwt`: Make the `to_decoded_custom_jwt` not rely on `JWTClaims`.

The JWTClaims is just an helper type, and prevents the use of custom JWT types with to_decoded_custom_jwt. This method should not require it and focus on JSON deserialization to a custom type.
