Re-evolve mnist_classification for 15 more minutes and refresh artefacts

Summary

Continue training the existing mnist_classification creature for an additional 15 minutes of wall-clock evolution, then regenerate all screenshots and charts and raise a per-example PR.

What Needs to Be Done

• Resume evolution from the current persisted mnist_classification champion for +15 minutes wall-clock.
• Append new run statistics to the example's evolution log.
• Regenerate every screenshot and chart artefact under mnist_classification/ (and any docs/ artefacts).
• Run ./quality.sh < /dev/null.
• Raise a PR scoped to mnist_classification/ only, attached to Refresh-2026-05, referencing parent Bump NEAT-AI deps then re-evolve each example for 15 more minutes #369.

Acceptance Criteria

• Creature persisted with +15 wall-clock minutes of additional evolution.
• All screenshots and charts under mnist_classification/ regenerated in the same PR.
• PR raised even with no fitness gain.
• ./quality.sh passes.
• PR scoped to mnist_classification/ only; attached to Refresh-2026-05; references Bump NEAT-AI deps then re-evolve each example for 15 more minutes #369.

• Monitor NEAT-AI behaviour during this run and, on any abnormal event, raise a deduplicated
  defect issue in the responsible stSoftwareAU/* repo per
  docs/monitoring-neat-ai.md.
