Ensure `geometry` is the primary column when `proj:geometry` is present

Looks like proj:geometry takes over sometimes, because https://github.com/geoarrow/geoarrow-rs/blob/42fbcdb53ce52ab7db2edec96c4fc4129474f311/rust/geoparquet/src/writer/metadata.rs#L229 is non-determinstic.

I didn't realize cross-project "fix" keywords ever worked. I guess it's because you're a maintainer here and you opened the PR on my repo? I assume if I opened the PR on my repo it wouldn't close the issue on your repo
