Update metrics documentation for Stargate v2

The current metrics documentation page only addresses how to access metrics in Stargate v1, via the example in the stargate/docker-images repo.

After completion of stargate/stargate#2401 we will have an equivalent example for Stargate v2 which we can use to update the metrics page.
