Model selection wildcards

Support wildcard model identifiers to automatically resolve to the latest available model version (e.g. claude-3-*, amazon.nova-*), backed by the Amazon Bedrock model catalog.

This avoids hardcoding specific version suffixes and ensures clients always use the most recent non-deprecated model matching the pattern.
