[Feature Request] Update test running to replay

Describe the solution you'd like

We need to replay our test workflows more. Today we don't replay nor do we run without cache, both of which could catch issues. At the least we need to try to auto-replay workflows that complete in tests.

There is a featue : https://docs.temporal.io/develop/python/testing-suite#replay But not sure how it works.
I'm unable to test this.
