Rename runner-pi -> runner across scripts, units, docs, examples, and tests. Also harden APPLIANCE_ROOT validation to prevent misquoted roots creating junk directories, keep kcov at 100%, and tighten lint-permissions to validate git-tracked executable bits (including tests stubs).

Renames the project from runner-pi to runner across scripts, systemd units, docs, examples, and tests.
Also adds APPLIANCE_ROOT validation to prevent accidental creation of quote-prefixed junk directories when paths are misquoted, and extends coverage exercises to keep kcov at 100%.
