Updated VVV testing instructions based on current VVV setup

In setting up a new computer, I discovered that VVV no longer does some WordPress testing stuff automatically. This PR updates with info on how to setup and configure the tests manually given the new scripts

I can’t say much about Vagrant, except that I don’t use it myself. I’m using a custom setup with Homebrew PHP, which works just as fine. Documentation-wise, this looks good to me 👍.
