feat: Linux-Builds (AppImage + deb) via CI-Matrix

- electron-builder um Linux-Ziel erweitert (AppImage + deb),
  Kategorie Education, Icon, Maintainer, Desktop-Eintrag
- Release-Workflow baut nun auf windows-latest UND ubuntu-latest
  (nativer better-sqlite3 muss je Zielsystem gebaut werden)
- max-parallel: 1, damit beide OS in denselben Release-Entwurf publizieren
