Is there a way to listen to the live output from the server?

No, there isn't live streaming support at the moment. I feel that it would impose significant privacy risks, as it would essentially turn BirdNET-Go into an eavesdropping device - and I feel uneasy about enabling such a possibility.

That's a fair concern and I'm a big privacy advocate myself, however, if someone already has the know-how to set up a BirdNET (pi or go or whatever), then they could have easily have made an eavesdropping device (or put in a wifi cam) if that's what they were trying to do. It's just a handy feature that is in BirdNET-Pi which is very useful for debugging and just listening to the soundscape (in my private backyard). That's not to say you must have feature parity with them, but I'd much rather use your Go implementation.

I guess as an alternative, I suppose I could set up the RTSP stream on the same device and then use that as the source for BirdNET-Go and then be able to listen to that myself at will. Would probably introduce some overhead, but not the worst I guess.

A native live stream would require quite a bit of overhead as well. Golang has a very limited set of audio libraries available, so audio compression for live streaming would need to be handled by ffmpeg anyway.
